1 Jalapeno pepper, diced (seeds and veins removed)
1/2 cup white onion, small dice
1/2 tsp salt
3 ripe avocados
1 cup Roma tomatoes, small dice
1/4 cup fresh cilantro, roughly chopped
1 Jalapeno pepper, diced, not seeded
Place 1 Jalapeno (diced and seeded) and half of the diced onion with salt into your molcajete. Crush them together, and the juices release will help to keep the avocado from going brown.
Halve the avocados and scoop the flesh into a bowl. Mash the avocado to your desired texture. (Can be smooth or chunky) Add the rest of the ingredients and stir together well. Taste for salt.
